We start with organic, green, heritage-certified, fair-trade, beans from the high altitudes of the Huehuetenango region of Guatemala, some of the best Central American coffee available. Then we roast it very slowly until the beans turn a very dark chocolate color. The result is a rich flavor with no bitterness, because the very slowly roasted beans produce almost no acid taste. It is perfect for making a very strong cup of jo!
